Idly or Idli is a steamed cake made from rice and black lentils originating from Southern India. Idlis are made in a specialized mold and eaten with chutney, vegetable stew. To make your diet a bit healthier, swap a donut or muffin for an idly. Organic idly rice is short-grained, parboiled rice specially processed for making idlis and dosas. Parboiled rice is treated with a special steam-pressure process before milling. The grain is soaked, steamed, dried and then milled to remove the outer hull, resulting in rice that has double the fiber and half the glycemic load of regular white rice.
The term “organic” refers to the way agricultural products are grown and processed by using natural methods such as the use of manure and compost instead of chemical fertilizers. While the conventionally grown idly rice doesn’t score enough points in the health benefits column, the organic idly rice has already won the race.
