Bura sugar is the least refined or processed form of sugar or sugarcane juice. Comparatively, it’s the closest form of natural sugar. The sugarcane juice extracted from the pressed sugarcane. It is left to boil until the water or moisture is totally evaporated from the juice. Only the thick sugar syrup is left, which when cooled, hardens and crystallizes. The sugar that we get at this stage is called as bura sugar. Since it goes through the process of reduction and refinement only once, bura sugar contains certain amount of nutrients. Bura sugar contains molasses which possesses certain minerals in very small amounts. This Sugar includes calcium, vitamins B3, B5, and iron. The darker is the bura sugar, the higher is the content of molasses.
