Barnyard Millet is a tiny white and round type of grain which belongs to the millet family. Its scientific name is Echinochloa frumantacea which is usually as notorious as a weed. It is also called Cockspur grass or billion dollar grass. In India, cereal grains are not usually consumed during fasts. Hence, Barnyard millet is a popular ingredient during Navratna. While cooking any rice based dish during fasts, samovat or organic barnyard grains are consumed. There are around 35 known species of it known to mankind. It is grown in other countries like Korea, Japan, and West Africa.
Barnyard Millet is mostly starchy but there is a considerable amount of protein content in them as well. It has a low glycemic index. It is rich in fiber and iron. It aids in weight loss as it is extremely low calories. It is also gluten-free. It is recommended for patients with cardiovascular disorders or diabetes mellitus.
Try cooking porridge using barnyard millet for a soft and delicious but wholesome meal. One can make idli also using barnyard millet. You can try making chilla and dosa also with it. A twist to the Indian recipe of rice is to add schezwan sauce to the barnyard millet used as an alternative for rice. For fasts, khichadi and pulav also taste great with barnyard millet.
